Thomas Ho served as Head Sommelier at Asia's 50 Best Restaurant "Le Moût Restaurant (Relais & Châteaux)" from 2010 to 2018 and received the A.S.I. International Sommelier Diploma in 2016. He represented Taiwan in the 15th annual World's Best Sommelier Competition in Mendoza, Argentina in the same year. In 2017, he had the opportunity to study the sommelier profession with Mr. Gerard Basset in the UK and published the book "PAIROLOGY — A Sommelier's Guide to Matching Food and Drink" in 2022.

Currently, Thomas is the founder of LE SOMM, a consulting company for 10 well-known Michelin restaurants in Taiwan, including Liberté, Mountain and Sea House, and MUME. He is also an Assistant Professor at the National Kaohsiung University of Hospitality and Tourism (NKUHT), where he teaches wine knowledge and the art of the sommelier profession.
