Graduated from one of the most well-known hotel management schools in Switzerland in 2008, Billy has started his career in the hospitality industry for over 10 years. With his qualification and working experience, Billy had become a professional sommelier excelling in wine and food pairing.
He has also managed wine portfolios across reputable hotels and dinning groups in such as Grand Hyatt Hong Kong, Four Seasons Hotel Hong Kong, The Peninsula Hong Kong, Gourmet Dining Group and K.O Dining. With his refined service skills and communication skills, Billy has always received recognition from both guests and colleagues. His meticulous service standards paved the way for his tenure at the Vocational Training Council since 2009 as a tutor. Besides, his passion in wine drove him to join Hong Kong Sommelier Association in 2013 and Hong Kong General Chamber of Wine & Spirits in 2023.
Billy joins Cathay Hong Kong International Wine & Spirit Competition as a wine judge since 2017, and was broadcasted in Oppa’s Cuisine in TVB as a wine & food pairings adviser in 2021.
Billy’s string of accolades include: Maître cellérier by Les Echevins de Bouzy; Champagne Officier of Ordre des Coteaux de Champagne; Participant of Côtes du Rhône Challenge
